Drouin XO Calvados
A dense, rich and elegant XO Calvados Pays d'Auge from Christian Drouin, aged at least 6 years in a combination of casks, including some ex-wine, ex-fortified wine and ex-brandy casks.
Made to the more restrictive rules of the Calvados Pays d'Auge AOC, this XO Calvados is produced from a combination of bitter, bitter-sweet, sweet and sharp cider apples using a double distillation in copper stills. It is aged in small previously-used casks, including some former wine casks and also uses some former fortified wine casks and brandy casks, giving extra sweetness and complexity.
Christian Drouin's tasting notes... "Dense, rich, with notes of baked apples and tarte tatin, the nose evolves towards a subtle rancio."
