Using lemon peel leftover from juicing, which are then soaked in Ogilvy's potato vodka, then sweetened with only two/thirds of the amount of sugar in most comercialy available limoncellos. Created for the restaurant Six By Nico for one of their tasting menus and now available publically.
Producer's note:
"Nose: Burst of delicious natural lemon zest and oils with subtle lingering hints of caramelised sugar.
Palate: Sugared sweetness up front quickly replaced by an intemse burst of tangy lemon pulling the cheeks in.
Finish: Mid ranged with increasing lemon zest intensity, sweet and bitter flavours balanced perfectly."
