Kaiyo Japanese whisky is fully aged in rare and expensive Mizunara oak casks - a Japanese type of oak which is as notoriously difficult to work with as it is highly regarded for whisky maturation.
Kaiyo is aged at sea where several months of journeying cause a particularly rapid development of the whisky's flavours.
Mizanara oak has a particularly delicate wood grain and it can take centuries for trees to grow to a suitable size for cask making, but it is considered perhaps the finest oak for whisky maturation, giving a unique and complex sweet and spicy character.

Delicate floral nose, with ripe dried fruit, hints of vanilla and spice. A silky smooth body with a long, lingering honey finish.
