The Bellevue


One of four cocktail creations made by ourselves in collaboration Edinburgh Gin. With Edinburgh Royal Botanic Gardens 1670 Gin this is packed full of floral and herbaceous flavours with a bright citrus finish. 


The complex Edinburgh Royal Botanic Gardens 1670 Gin shines when paired with Highland Boundary Birch & Elderflower Liqueur, El Bandarra Blanco Vermouth and a touch of Green Chartreuse. For balance we added a tiny bit of Supasawa gives a little acidity, The Bitter Truth Lemon Bitters and a dash of Chartreuse Elixir Vegetal. This cocktail will appeal to lovers of slightly more herbal drinks.

How To Serve

Stir 70ml-100ml per drink vigorously with ice in a mixing glass to dilute. Then strain into a chilled cocktail glass and garnish with a lemon twist.  For a longer drink, fill a highball glass with ice, pour some cocktail in and top with tonic or soda.
