Copalli Barrel Rested Rum
Aged sugar cane rum from a single organic estate in Belize.
This bottle from Copalli Rum is the result of organic sugar cane farming on their single estate in Southern Belize. The fermented sugar cane juice is distilled exclusively in a pot still, and aged for a short period of time in ex-bourbon barrels. The resulting rum is dry, chewy, and has a bit of that grassy funk you would expect in a sugar cane rum, something like an Rhum Agricole, but with a unique flavour of its own. This rum is slightly lighter in body than you might expect, and a subtle note of vanilla compliments the grassy funk very well. 70cl / 44% ABV
