QuiQuiRiQui Mezcal Mole Pechuga (vegan)


An unusual mezcal that's been made using mole.


Pechuga is traditionally made by redistilling mezcal with chicken, but this limited edition from QuiQuiRiQui instead macerates the spirit with mole paste before the redistillation.

QuiQuiRiQui partner with small community producers using traditional methods. This particular mezcal was made for QQRQ by the Mendez family from Santiago Matatlan, using a process of hand harvesting, conical stone pit and wood fire roasting, traditional tahona milling, wild yeast fermentation in open wood vats and wood-fired copper pot still triple distillation.
